PinFTW: Carrot Chips

Sorry I missed you all yesterday! Staying on a regular blog posting schedule during the summer months is a lot harder than I thought it would be. We're staying up later, out doing more things, and have a different schedule everyday. Last night we visited with family for about four hours - enjoying dinner, dessert, and a tour of their new house. We could never pull that off during the school year. I didn't worry about bed time once and it was fabulous. Even more fabulous, the kids let us sleep until after 8. Despite the occasional chaos, this summer has been truly awesome so far. You want to know what else is awesome? Okay, it's random, but awesome no less...Carrot Chips!

This is a great recipe because it can be made for a little more than pocket-change per serving; it's easy; it's HEALTHY; it's great year-round; and, enjoyed by kids and adults alike! The recipe shown to the right is pretty simple. If you want to get all crazy with your veggies, you could try alternative seasonings. Rosemary is good on these chips and would be a nice complement to baked chicken. Garlic salt is also good. You could sprinkle some sugar and cinnamon on (that pretty much negates the health-food factor, btw) And, if you're brave, dust these chips with cayenne for a little kick.
